I created this recipe when I read about the popular American fast food called the Sloppy Joe. You could do this with Jackfruit as well, but since I didn't have any at the time, I used gorgeous juicy mushrooms, purple onions and kale instead. And lots of olive oil, with refried beans as the spread on my favourite vegan bread rolls from the organic store.
My children aren't always too keen on my veggie creations, but my eldest, Chloe, saw me digging into one of these, with juice everywhere and cheeks stuffed like a chipmunk, and she decided it looked good enough to try. She's been hooked on them ever since, and we often enjoy a Sloppy Jane together for breakfast... or lunch... or dinner.
Seriously, have plenty of serviettes ready, and eat this in private or with fellow messy eaters;-)
